The total vineyard area of Burgundy is not large, but the name of this administrative province includes several very different but excellent wine regions. In particular, the richest and most important Cote d'0r, the heart of Burgundy and the original home of Chardonnays and Pinot noir, is made up of the Cote de Beaune to the south and the Cote de Nuits to the north. The chardonnay of Chablis, the red and white wines of Cote Chalonnaise and the white wines of Maconnais are all equally part of Burgundy and would be stars in their own right in any other region. Immediately to the south of Macon lies Beaujolais, which is very different from Burgundy in terms of size, style, soil and grape variety.

The total vineyard area of Burgundy is not large, but the name of this administrative province includes several very different but excellent wine regions. The Burgundians always looked at the seemingly bland golden hills with the same reverence that the Athenians had for an unknown Greek god. People are always curious about the fact that some of the small vineyards on this hill produce the best wines, each with its own distinctive character, while others do not. Of course, one can always find some factors that make one vineyard different from another, such as some factors that make the grapes harvest with more sugar, some factors that make the skin thicker, or some factors that give the grapes more character and quality. Some factors are understood, but others are not. The topsoil and subsoil have been analyzed again and again, temperature, humidity and wind direction have been measured in detail, and the wine itself has been thoroughly studied... Even so, the central mystery remains unexplained. One can only arrange for certain natural conditions and try to establish some causal relationship between them and the reputation of great wines. Although wine-loving geographers are drawn to gold Hills like moths to a flame, until now no one has been able to convincingly prove the connection. Located along an important geological fault line, Golden Hill contains seafloor sediments from several different geological epochs, each rich in calcium deposited by fossil crustaceans, layered like a sandwich cake and exposed on top of the hill. These rocks were exposed to the surface and gradually weaved into soils of different ages. This, combined with differences in the slope of the hills, mixed these soils in various proportions. Some of the small valleys known locally as combes met the slopes of the golden hills at right angles, which also increased the variation of the soil mix.
